You will be working alongside the executive chef and be responsible for staff management, so essential you are a team player.Duties:Following recipes and creating menusStaff schedules, including training staffFollowing appropriate guidelines for reduced wasteEnsuring that guests with food allergies and sensitivities are catered forAssisting the executive chef in recipe development, team methods, and kitchen culture while being a foundational part of a permanent team.Job Responsibilities:Maintaining standards for food storage, rotation, quality, and appearanceOversee provisions and ordersUnderstanding of menu and recipe development techniquesFollowing direction of executive chefStrong leadership abilitiesOngoing awareness of culinary trends, including plant based, paleo, vegan, autoimmune, gluten free, grain free and dairy freeExcellent knife-handling skills and speedHarvesting from vegetable garden and surplus produce to make ferments, preserves, pickles, sauces and chutneys.You should have a minimum of 5 years' experience working as a Head Chef in a private residence or yacht. Flexibility with schedule and hours, you will be required to work over weekends and holidays. Formal Culinary Training or degree essential. Spanish speaker a bonus.
